Kane County was founded on January 16th, 1836 and its name honors Elias Kent: convention delegate at Kaskaskia in 1818 and Illinois U.S. Senator until he died in 1835. Some of the earliest Kane County farmers produced milk and butter for a growing Chicago population. By 1865, the county became a dairy center to the world. Gail Borden even chose Elgin, IL as their base of operations, condensing milk for unrefrigerated shipments in cans.
